In a medium bowl, whisk flour, sugar, baking powder and a pinch of salt until combined. Add butter. Use fingertips to rub butter into flour until fine breadcrumbs form.
Make a well in centre of flour mixture. Add most of the milk. Use a flat-bladed knife to stir until combined, adding more of the remaining milk, if needed. Turn dough onto a lightly floured surface. For the perfect air fryer scones, gently knead until just smooth. Press dough into a 2cm-thick disc. Use a 5cm round pastry cutter to cut 12 rounds from the dough, cutting scones out closely together. Press leftover dough together. Repeat to make 4 more scones.
Lightly spray basket of an air fryer with oil. Place scones, just touching, in air fryer. Brush with remaining milk. Air-fry 12-15 mins at 160°C or until risen. Transfer to a wire rack to cool.
Meanwhile, use electric beaters to beat cream with vanilla bean paste and icing sugar until soft peaks. Serve your air fryer scones with jam, vanilla cream and dusted with icing sugar.
