Level up your Pad Thai with this pork salad!
This is the perfect recipe for when you’re craving Pad Thai but need something a bit lighter.
Ingredients:
350g pork fillet, sliced
1 tbsp sesame oil
150g rice noodles
2 tsp peanut oil
2 tsp chilli flakes
4 eggs, beaten
1 carrot, julienned
3 green onions, sliced
½ wombok, shredded
1 cup bean sprouts, trimmed
1 bunch coriander, leaves picked
½ cup chopped roasted peanuts
sliced red chilli, lime wedges, to serve
Dressing:
2 tbsp each soy sauce, lime juice
1 tbsp each brown sugar, fish sauce, tamarind puree
How to make the Pad Thai Pork Salad:
In a bowl, toss pork with sesame oil. In a wok, stir-fry 3-4 mins. Set aside.
Soak noodles. Drain, rinse.
DRESSING In a jug, whisk all ingredients together.
In same wok, heat peanut oil on high. Stir-fry chilli a few secs. Add eggs, stirring 1-2 mins. Add carrot and green onion. Stir-fry 1 min. Return pork to wok with noodles and dressing. Toss well.
Remove from heat. Toss wombok, sprouts and coriander through. Serve with peanuts, chilli and lime.
