Fish burgers are a summer staple but they can get expensive. So why not make them from home with the recipe below!
Ingredients:
500g skinless firm white fish fillets, sliced into 8
½ cup plain flour
2 eggs, whisked
½ cup panko crumbs
vegetable oil, for shallow-frying
4 long bread rolls
fries, to serve
Chilli Slaw
½ cup mayonnaise
2 tbsp lemon juice
2 tsp chopped dill, plus extra to serve
1 long red chilli, seeded, finely chopped
200g bag coleslaw
How to make the crumbed fish burgers:
Coat fish in flour, shaking off excess. Dip in egg and press into crumbs to coat. Place on a tray and chill until required.
For the chilli slaw. In a small bowl, whisk mayonnaise and lemon juice until smooth. Stir dill and chilli through. Toss through slaw mix. Season.
In a frying pan, heat oil on high until a few crumbs sizzle when added. Fry fish 2 mins each side until golden. Drain.
Fill rolls with slaw and fish pieces. Top with mayo and extra dill and serve with fries.
