Fresh drink recipe: cranberry, lime and mint iced tea

Fact: on hot summer days, there’s nothing more refreshing than a tall glass of iced tea. And this recipe by The Weekly’s Food Director Fran Abdallaoui is a delicious and easy way to cool down in the warmer months.

Combining fresh lime and mint sprigs with Ocean Spray® light cranberry juice, this drink packs a health punch by adding cranberry antioxidants into your day. Plus, you can whip up a big jug in under 30 minutes, making it a sweet and simple beverage to share with family and friends.

Makes 2 litres. Prep time: 25 minutes (plus chilling).

INGREDIENTS

1/3 cup (75g) caster sugar

5 black tea bags, such as English Breakfast

Thinly peeled zest of 2 limes

1 litre boiling water

1 litre Ocean Spray® Light Cranberry Classic™, chilled

½ cup (125ml) lime juice (about 4 limes)

Crushed ice, to serve

2 limes, thinly sliced

4 cukes (baby cucumbers), thinly sliced lengthways into ribbons

Mint sprigs and soda water, to serve

METHOD

1 Place the sugar, tea bags and lime zest in a heat proof jug, add the boiling water and stir to combine. Set aside for 10 minutes to brew. Remove and discard tea bags and lime zest. Chill tea.

2 Combine tea, Ocean Spray® Light Cranberry Classic™ and lime juice in a large jug.

3 Divide ice, lime slices, cukes and mint sprigs among serving glasses. Fill three-quarters with iced tea and top with soda water to serve.
