Caprese chicken pasta salad recipe

Caprese salad or pasta? Why not both!

It’s always caprese salad OR pasta… Have both with this caprese chicken pasta salad recipe!

Ingredients:

  • 500g penne

  • 2 cups basil leaves, plus extra to serve

  • 1/3 cup olive oil

  • ¼ cup pine nuts

  • ¼ cup grated parmesan

  • 1 garlic clove, crushed

  • 1 barbecued chicken, skin, bones removed, shredded

  • 400g punnet heirloom cherry tomatoes, halved

  • 200g cherry bocconcini, torn

  • lemon wedges, to serve

How to make the caprese chicken pasta salad:

  1. In a large saucepan of boiling, salted water, cook pasta following packet directions. Drain. Set aside to cool.

  2. Meanwhile, in a food processor, pulse basil, oil, pine nuts, parmesan and garlic until smooth. Season.

  3. In a bowl, toss pasta, pesto, chicken, tomatoes and bocconcini together.

  4. Serve salad topped with extra basil leaves and accompanied with lemon wedges.
