It’s always caprese salad OR pasta… Have both with this caprese chicken pasta salad recipe!
Ingredients:
500g penne
2 cups basil leaves, plus extra to serve
1/3 cup olive oil
¼ cup pine nuts
¼ cup grated parmesan
1 garlic clove, crushed
1 barbecued chicken, skin, bones removed, shredded
400g punnet heirloom cherry tomatoes, halved
200g cherry bocconcini, torn
lemon wedges, to serve
How to make the caprese chicken pasta salad:
In a large saucepan of boiling, salted water, cook pasta following packet directions. Drain. Set aside to cool.
Meanwhile, in a food processor, pulse basil, oil, pine nuts, parmesan and garlic until smooth. Season.
In a bowl, toss pasta, pesto, chicken, tomatoes and bocconcini together.
Serve salad topped with extra basil leaves and accompanied with lemon wedges.
