Prep and cook time 15 minutes (+ freezing time). Makes 24
You will need:
6 medium bananas (1.2kg)
24 mini popsicle sticks
½ cup (100g) coconut oil, melted
2 tablespoons pure maple syrup
1½ tablespoons raw honey
1 cup (100g) cacao powder
¾ cup (120g) roasted salted peanuts, chopped finely
Method:
1. Line two trays with baking paper.
2. Peel and cut bananas into 4cm pieces; place standing upright on a tray. Push a popsicle stick into each banana piece; freeze for 1 hour.
3. Stir coconut oil, maple syrup and honey in a small saucepan over a low heat until almost melted. Remove from heat; continue stirring until completely melted. Sift cacao into coconut oil mixture; whisk until smooth. Transfer to a small jug.
4. Place 1½ teaspoonfuls of chopped peanuts, apart, in small piles over the remaining tray. Dip three-quarters of each banana into the cacao mixture; stand upright on a pile of chopped peanuts. Freeze the frozen banana treats for a further 30 minutes or until coating is set.
Pro tip: You can replace the peanuts with any nut you like. Freeze these treats in an airtight container for up to 3 days.
