Executive Chef Troy N. Thompson has prepared quite a spread for the A-listers as they sit down to dine on the evening of the 72nd annual Golden Globe Awards, held at the Beverly Hilton Hotel in California.

Starter: A healthy and modern take on the traditional Waldorf salad, which typically contains apples, celery, walnuts and lettuce.

Entrée: Vegetarian cannoli, handmade with ricotta, basil and fresh pasta, topped with tomato sauce, parmesan cheese and thinly sliced Californian vegetables.

Main Course: A duo of filet mignon and slow-baked arctic char accompanied by a potato croquette, heirloom tomato salad and a black Tuscan kale chip to top.

Dessert: A trio featuring cassis lemon cheesecake, hazelnut dacquoise and salted caramel.

Thompson has expressed his desire to stick to locally grown Californian ingredients. “I feel like these dishes are a really nice way to showcase the fresh produce we always use here at the Beverly Hilton, and our great relationships with the farmers who grow it,” the Chef told People magazine.

The evening will be serviced by approximately 150 wait staff, 10,000 place settings, 1,000 heads of Romaine lettuce, 600 bottles of wine and 400 bottles of Moet – not including the 1,500 mini bottles of champagne reserved for the red carpet.

Fashion model Elettra Wiedemann, of Impatient Foodie has also created two signature cocktails – Moët Bijou Rouge and Moët Sunset Starlet – that guests will enjoy at the event.

“Fortunately, I had two great champagnes to work with – the Moet Rose Imperial and Moet Brut Imperial,” she shares as a guest blogger on Refinery29 where she states that Moet approached her with the offer in 2013.

“I honestly wasn’t sure what I was doing, but I knew I wanted two cocktails with two very different personalities.”

“All I know is that I am so freaking excited and honored to walk into a room full of all the best actors of our time, sipping on cocktails made by little me (someone who didn’t previously know her way around a shaker).”
